Biscotti Original Italian Recipe

This is the recipe my family has used for many years. Good for dunking in coffee, wine or milk

Ingredients
  

  • 1/4 good olive oil 1/2 cup if doubling which I always do
  • 3/4 cup sugar 1 1/2 cups if doubling
  • 2 tsp real vanilla extract 4 tsps if doubling
  • 2 large eggs 4 if doubling
  • 1 3/4 cups all-purpose flour 3 1/2 if doubling
  • 1/4 tsp salt 1/2 if doubling
  • 1 tsp baking powder

Equipment

  • 1 large bowl
  • 1 large baking sheet or 2 small

Method
 

Directions
    INSTRUCTIONS Preheat oven to 300 degrees. In a large bowl, combine oil, sugar and vanilla, and stir until blended. Beat the eggs into the mixture. In a separate bowl, combine all of the dry ingredients. Slowly stir the dry mixture into the wet mixture until well combined.Divide the dough into two(4) rectangular "logs," about 2" across, and place on a parchment-lined baking sheet. Score. Bake for 35 minutes, or until lightly browned. Remove from oven, and reduce heat to 275. Let cool for at least 10 minutes.

    Slice the biscotti on the diagonal with a non-serrated knife into 3/4" slices. Place the slices on their sides on a parchment-lined baking sheet and bake for 8 to 10 minutes, or until thoroughly dry.

    Variation Cranberry and Pistachio Biscotti Recipe

    Add:

    1/2 cup dried cranberries

    1 1/2 cup pistachios

    or 1 cup Chocolate Chips
