
Fried Zucchini Appetizer
Zucchini rounds coated in flour, egg, and bread crumbs

Method
Slice zucchini into 1/4" or 1/2" roundsAdd oil to a large frying pan and heat on medium
Scramble the eggs with a tablespoon or 2 or water
Dip each zucchini round in flour, then in egg and then in breadcrumbs
Fry each piece on one side and then the other side until light brown
Serve with garlic aioli or bleu cheese dressing.
Garlic Aioli
1. Add all ingredients except paprika into a small mixing bowl.
2. Whisk until all of the ingredients are well incorporated.
3. Sprinkle paprika over the mixture.
4. Cover the bowl and chill for 20 minutes.
