Mom’s No-Meat-on- Friday Pasta with Tuna Fish Sauce

A quick recipe for pasta in a tuna-tomato sauce

Ingredients
  

  • 2 5 oz cans tuna in oil https://tinyurl.com/e8mbbw2m
  • 1 Tbsp dried oregano
  • 6 ounce frozen chopped onions
  • 1 pound rotini pasta
  • 1 bay leaf
  • 2 8 oz cans tomato sauce
  • 2 tbsps. olive oil

Equipment

  • 1 large sauté pan
  • 1 Pasta pot with colander

Method
 

  1. Fill a pasta pot with 1 gallon of water and set on high heat
  2. Put the olive oil in a deep sauté pan
  3. Sauté onions until translucent
  4. Add oregano and sauté a minute
  5. Add tuna to pan, break up and cook for 2 minutes
  6. Add tomato sauce and the bay leaf
  7. Cook for an few minutes covered
  8. When water has boiled, add the pasta
  9. Put two tbsps. of salt in the water
  10. Cook pasta until al denté. Save a cup of the pasta water.
  11. If the sauce is too thick, add some of the saved pasta water until you get the consistency you like.
  12. Remove the bay leaf.
  13. Put the pasta into the tomato sauce and mix thoroughly.
  14. Remove the bay leaf.
  15. Serve and enjoy.
