Mom's Stay Soft Chocolate Icing

A quick chocolate icing that always stays soft

Ingredients
  

  • 1/4 cup Dutch Processed Cocoa https://tinyurl.com/3p6r259v
  • 2 tsps. cornstarch
  • 3/4 cup sugar
  • 1 cup milk
  • 1 tsp vanilla
  • 1 tsp soft butter
  • 1 tbsp. instant coffed optional

Equipment

  • 1 sauté pot peferably non-stick

Method
 

  1. Blend cocoa, cornstarch, instant coffee(optional) and sugar
  2. Add milk and cook slowly until thickened stirring constantly
  3. Remove from heat and add vanilla and butter
  4. Stir until cool and thickened to spread consistency
  5. I t take 1/2 times the recipe for a two layer cake

Notes

For a two layer cake 
1 1/2 times the recipe
6 tbsps. cocoa
3 tbsps. cornstarch
1 cup + 2 tbsps sugar
1 1/2 tsp vanilla
1 1/2 tsp butter
