Pat’s Fresh Apple Cake

Pat’s Fresh Apple Cake

an easy but delicious recipe using fresh apples

Ingredients
  

  • 3 cups all purpose flour
  • 1 cup vegetable oil I use canola but any unflavored will do
  • 1 tsp salt granulated not course
  • 1 tsp baking posder
  • 1 tsp baking soda
  • 2 cups sugar
  • 3 eggs eggs
  • 3 cups peeled and chopped apples I use granny smiths but any bakeable apple will do
  • 1 cup chopped nuts optional but I use walnuts
  • 1 tsp vanilla
  • 1 tsp cinnamon

Equipment

  • 1 bundt mold must have a hole iin the middle when pouring the glaze

Method
 

  1. Combine flour, salt, baking powder, baking soda and sugar. Add oil and eggs and beat to combine. Stir in apples. nuts and vanilla. Batter will be stiff. Put batter in an ungreased 10 inch tube pan. Bake 1 hour at 350 degrees. Cool 20 minutes before turning out.
    Glaze
    1/4 cup butter
    3 tbsps. whipping cream
    1 cup brown sugar
    1/2 tsp vanilla
    pinch of salt
    Melt butter, add sugar salt and cream stirring to combine. Cook 2 minutes. Pour over cake
