Pat’s Green Dip with Crudités

Pat’s Green Dip with Crudités

A great dip with crudités or steamed veggies

Ingredients
  

  • 1 cup chopped parsley
  • 1 cup mayo
  • 2 tbsps milk
  • 1 1 chopped green onion
  • 1/8 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1 or 2 red, yellow or orange bell peppers
  • 1 small head cauliflower
  • 1 head broccoli
  • a small bag mini carrots

Equipment

  • 1 blender
  • 1 medium bowl

Method
 

  1. Put all ingredients except the carrots, broccoli, cauliflower, and peppers in a blender and mix until smooth.
  2. Cut peppers into strips
  3. Cut cauliflower into chunks
  4. Cut the broccoli into dippable size
  5. I sometimes steam the vegetables for 10 minutes until tender-crisp
  6. Serve the dip in a bowl in the middle of the vegetables
