Potatoes and Sausage Oregnata

Mom's Italian potatoes with sausage

Ingredients
  

  • 4 large potatoes cut into wedges like French fried
  • enough oregano to sprinkle on potatoes
  • 4 links Italian sausage
  • 1 or 2 medium onions sliced in quarters
  • enough olive to coat onions and potatoes

Equipment

  • 1 medium bows
  • 1 large roasted pan

Method
 

Instructions

Light the oven at 375°

Boil the potatoes until crisp tender

Put the potatoes and onions in a large bowl

Lightly coat the potatoes with the oil and oregano and mix thoroughly

Put the potatoes and sausage in a roasting pan and roast until the potatoes are tender for about 45 minutes or until potates are crusty fliping them after 30 minutes.
