Scalloped Cabbage Mom’s

Mom’s Scalloped Cabbage

Ingredients
  

  • 1 large or 2 small cabbages
  • 1/3 cup flour
  • 1 tsp salt
  • 1/4 tsp pepper
  • 3 cups scalded milk
  • 3-4 stalks chopped green onions green and white parts

Method
 

Scalloped Cabbage Mom's

Butter a casserole.

Preheat oven to 350°.

Slice cabbage into strips 1/2" wide and two to three inches long.

Add cabbage to pot of salted boiling water and cook for 3-5 minutes until crisp tender.

Add cabbage to the white sauce.

Layer cabbage and white sauce in the casserole sprinkling parmesan cheese and bread crumbs between the layers.

Sprinkle more parmesan and breadcrumbs on top of the final layer and dot with butter.

Bake for 25-30 minutes until bubbly and light brown on top.

  1. For the white sauce
  2. Melt the butter
  3. Add the flour and cook for a few minutes-don't brown it
  4. Add the scalded milk all at once and cook until thickenes
  5. Add 1/2 cup of parmesan or locatelli-romano and cook until melted
  6. Add the green onions
  7. Yeah, mom was Italian, thus the parmesan
