Cuisine: Italian

Ingredients

  • 1 cup each catsup chili sauce(like the jarred Heinz chili sauce) and water
  • 1/2 cup olive oil 1/2 cup tarragon vinegar(use regular if you don’t have this and add some dried tarragon, and 1/2 cup lemon juice(does not have to be fresh)
  • 1 clove garlic minced or pressed or garlic powder to taste
  • 2 tbsps brown sugar
  • 1 tbsp worchester sauce and horseradish
  • Dash of cayenne or more if you like it hot
  • Salt to taste
  • 1 small cauliflower
  • 3 medium carrots
  • 2 stalks celery
  • 1/2 pound small mushrooms
  • 1 jar 8oz pickled Italian-style peppers( not hot ones)
  • 2 cans solid pack tuna
  • Stuffed green olives and 1 can black olives

Equipment

  • 4-5 qt pan

Method

  1. In a 4 or 5 quart pan combine catsup, chili sauce, water, oil, venegar, lemong juice, garlic, brown sugar, Worchestershire sauce, horseradish, cayenne and salt to taste. Bring to a boil, then reduce heat and simmer uncovered for a few minutes.
  2. Break cauliflower into flowerets, slice carrots 1/4 inch thick, (I use a ruffled edge cutter for this), slice celery diagonally into 1 1/2 inche lengths.
  3. Add cauliflower, carrots and celery along with mushrooms and pickled peppers. Cover, reduce heat and simmer slowly until veggies are crisp-tender(about 20 minutes).
  4. Drain tuna and add to mixture taking care to keep pieces whole.
  5. Simmer uncovered until just heated through. Add olives and refrigerate.
  6. This will keep for two weeks in the refrigerator.

Notes

This is an Italian/Sicilian appetizer that we serve during the holidays.  It is an agro dolce recipe(sweet and sour).  It has a lot of ingredients, none of them hard to find, but it is well worth the effort as I have not found anything close to this aside from the Sicilian caponata which is also this site.
